*This menu is a BASELINE; however we can craft a meal plan with you that is tailor made for your specific tastes and nutritional goals.


RAW VEGAN MEALS

Raw Vegan meals are uncooked, or dehydrated at no more than 140 degrees. This retains most all of the nutrients in the food, and is optimal for those wanting to boost immunity, detox, and get the most nutritional value out of their food.

Meatloaf-walnut and mushrooms based “meat” with seasonings. Served with Cauliflower Potato-less Salad

Nachos-dehydrated walnut meat, onions, bell peppers, mixed greens, pico de gallo, cashew sour cream, avocado on dehyrated corn chips. Gluten free.

Pizza-mushrooms, olives, bell peppers, onions, spinach, and cashew cheese on a dehydrated almond based pizza crust. Gluten Free.

SALADS

Taco Salad – mixed greens, house made corn tortilla chips, bell peppers, onions, black beans, pico de gallo, avocado, corn, with cilantro lime dressing

Chef’s D-lite – mixed greens, carrot, cucumber, onion, bell pepper, tomatos, pasta salad tofu scramble, sausage crumbles, home made Thousand Island dressing.

Waldorf Salad – mixed greens, pecans, strawberries, blueberries, and cucumbers with strawberry balsamic dressing.

BOWLS

Italiano – RAW (dehydrated) Italian sausage, bell peppers, spinach, couscous, onion, tomatoes, Italian herbs and vegan mozzarella, with strawberry balsamic vinaigrette.

Mediterranean Bowl – Quinoa, kalamata olives, green olives, mixed greens, bell peppers, onions, chickpeas, cucumbers, celery, tomatoes, lemon tzatziki.

Nacho Bowl – Mixed greens, brown rice, bell peppers, onion, crumble walnut mushroom “meat”, cashew cheese, black beans, pico de gallo, cilantro lime dressing.

Thai Chi Bowl – Rice noodles, mixed greens, air fried tofu, onion, bell peppers, cucumbers, cilantro, basil, mint, with sesame soy and ginger dressing OR Thai Peanut Dressing

WRAPS

Raw chickpea “tuna” wrap – mixed greens, house made chickpea tuna, tomatoes, onion, bell peppers, pickles.

Calzone – walnut sausage meat with spinach tomato sauce, vegan cashew cheese, onions and bell peppers baked in a soft vegan crust.

Buffalo Chikin wrap – Buffalo flavored soy curls with mixed greens, bell peppers, with a house made Buffalo sauce.

Jack the Wrap – Seasoned jackfruit, bell peppers, onions, brown rice, spring mix, cashew cheese.



COOKED MEALS

Chickpea croquettes, steamed vegetables and mashed potatoes, small dessert.

Spaghetti squash and walnut mushroom “meat” balls, sauteed spinach, and vegan cheese. Served with a zesty kale salad,

Southern Comfort Platter- Fried Mushrroms with vegan mac-n-cheese and kale salad, small vegan sweet potato pie.

Dirty Mack – Vegan Mac n Cheese with walnut mushroom crumbles, steamed vegetables, mixed green salad.

General Tso’s Chikn- Crispy fried Soy curls in Chef SouL’s homemade Asian inspired sauce. (Spicy or Mild), with fried brown rice and plenty of stir fried veggies.

Jack and Mushroom Steak-Lion’s Mane Mushrooms mixed with seasoned jackfruit and seared to perfection with plant based au jus, served with roasted garlic dill mash and sauteed broccoli
